Guillen are an amazing family run outfit of producers from Guijelo a tiny province in Salamanca that provides us with some of the most prized Iberico meats in Spain. The pigs roam freely on the 'Dehesa' or pasture eating a mix of natural feed and acorns. This Jamon is utterly caramely and delicious after being matured for 26 months. Basically you are getting exceptional flavour and quality
